In a bowl, mix the natural peanut butter or ground peanuts with the water or vegetable broth until smooth.
Pour the peanut sauce into the pot with the vegetables.
Stir well to combine and bring to a simmer.
Reduce the heat to low and let the mixture simmer for about 20-25 minutes, or until the vegetables are tender and the sauce has thickened.
Stir occasionally to prevent sticking and ensure even cooking.
Season with salt to taste.
