Ingredients

  • 1 lb (450 g) lamb or beef, cut into bite-sized pieces
  • 4 large onions, thinly sliced
  • 4 large flatbreads (such as lavash or naan), torn into pieces
  • 1/4 cup (60 ml) vegetable oil or clarified butter
  • Salt to taste
  • Black pepper to taste
  • Water or broth (enough to cover the meat)

Instructions

Cook the Meat

In a large pot, heat the vegetable oil or clarified butter over medium heat.

Add the meat pieces and cook until they are browned on all sides.

Add Onions and Seasoning

Add the thinly sliced onions to the pot with the meat.

Season with salt and black pepper to taste.

Continue to cook until the onions are soft and translucent.

Add Water or Broth

Pour enough water or broth into the pot to cover the meat and onions.

Bring the mixture to a boil, then reduce the heat to low.

Cover the pot and let it simmer for about 1-1.5 hours, or until the meat is tender.

Prepare the Flatbread

While the meat is cooking, tear the flatbreads into bite-sized pieces.

Place the torn flatbread pieces into a large serving dish or individual bowls.

Combine and Serve

Once the meat is tender, pour the meat and onion mixture over the torn flatbread pieces.

Mix gently to combine, ensuring that the bread soaks up the flavorful broth.
