Ingredients

  • 1 cup (150 g) cornmeal or corn flour
  • 1/2 cup (75 g) granulated sugar
  • 4 cups (960 ml) water
  • 1 cup (240 ml) milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg (optional)
  • Pinch of salt

Instructions

Prepare the Cornmeal Mixture

In a medium bowl, mix the cornmeal with 2 cups (480 ml) of water to form a smooth paste. Ensure there are no lumps.

Cook the Mixture

In a large pot, bring the remaining 2 cups (480 ml) of water to a boil.

Gradually add the cornmeal paste to the boiling water, stirring continuously to prevent lumps from forming.

Reduce the heat to medium and continue to cook, stirring frequently, until the mixture thickens and the cornmeal is fully cooked, about 10-15 minutes.

Add Milk and Flavorings

Stir in the milk, sugar, vanilla extract, ground nutmeg (if using), and a pinch of salt.

Continue to cook over medium heat, stirring constantly, until the mixture is well combined and heated through, about 5-7 minutes.

Serve

Remove the pot from the heat and let the Akpan cool slightly.
