Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1/2 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup chicken breast, thinly sliced (or shrimp, beef, pork)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 1 green onion, chopped
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

Prepare the Ingredients

Ensure all ingredients are prepped and ready before starting to cook.

Heat the Oil

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the minced garlic and chopped onion, stir-fry for 1-2 minutes until fragrant and the onion is translucent.

Cook the Protein

Add the thinly sliced chicken (or shrimp, beef, pork) to the skillet.

Stir-fry for 3-4 minutes until the protein is cooked through.

Add the Vegetables

Add the mixed vegetables to the skillet and stir-fry for another 2-3 minutes until they are tender.

Cook the Eggs

Push the ingredients to one side of the skillet.

Pour the beaten eggs into the empty side and scramble them until fully cooked.

Combine with Rice

Add the cooked jasmine rice to the skillet.

Stir everything together, breaking up any clumps of rice.

Season the Fried Rice

Add the soy sauce, fish sauce, sugar, and white pepper.

Stir-fry for another 2-3 minutes until everything is well combined and heated through.

Finish with Green Onions

Stir in the chopped green onion and cook for an additional minute.

Serve
