Add the beef ribs or goat meat chunks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
Preheat your grill to medium-high heat.
Remove the meat from the marinade and let any excess marinade drip off.
Grill the meat, turning occasionally, until it is cooked through and has a nice char on the outside, about 20-30 minutes depending on the size of the chunks.
Remove the meat from the grill and let it rest for a few minutes before serving.
Garnish with fresh cilantro or parsley if desired.
