Ingredients

  • 1 lb (450 g) lamb, cut into small cubes or thin strips
  • 2-3 tablespoons vegetable oil or lamb fat
  • 2 large onions, thinly sliced
  • 2-3 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Fresh herbs, such as parsley or cilantro, chopped (for garnish)

Instructions

Prepare the Lamb

Cut the lamb into small cubes or thin strips. Pat the lamb pieces dry with paper towels to ensure they brown properly during cooking.

Cook the Lamb

In a large skillet or frying pan, heat the vegetable oil or lamb fat over medium-high heat.

Add the lamb pieces to the hot pan and cook until they are browned on all sides, about 5-7 minutes. If needed, cook the lamb in batches to avoid overcrowding the pan.

Add the Onions and Garlic

Add the thinly sliced onions to the pan with the browned lamb. Cook, stirring frequently, until the onions are soft and caramelized, about 10-15 minutes.

Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Season the Dish

Season the lamb and onions with salt, black pepper, ground cumin, and ground coriander. Stir well to combine and cook for another 2-3 minutes to allow the flavors to meld together.

Garnish and Serve

Transfer the Jiz-Biz to a serving dish.

Garnish with chopped fresh herbs, such as parsley or cilantro.
