Ingredients

  • 2 large pita breads, toasted or fried
  • 1 head of romaine lettuce, chopped
  • 2 large tomatoes, chopped
  • 1 cucumber, chopped
  • 1 red bell pepper, chopped
  • 5-6 radishes, sliced
  • 4 green onions, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • For the Dressing:
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 1 tablespoon sumac
  • 1 teaspoon pomegranate molasses (optional)
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

Prepare the Pita Bread

Preheat your oven to 350°F (175°C).

Cut the pita breads into bite-sized pieces.

Spread the pita pieces on a baking sheet and toast in the oven for about 10-15 minutes, or until they are crispy and golden brown. Alternatively, you can fry the pita pieces in hot oil until crispy.

Prepare the Vegetables

In a large mixing bowl, combine the chopped romaine lettuce, tomatoes, cucumber, red bell pepper, radishes, green onions, parsley, and mint leaves.

Prepare the Dressing

In a small bowl, whisk together the extra virgin olive oil, lemon juice, sumac, pomegranate molasses (if using), minced garlic, salt, and black pepper.

Assemble the Salad

Pour the dressing over the chopped vegetables and toss to combine.

Just before serving, add the toasted or fried pita pieces to the salad and toss gently to mix.

Serve

Transfer the fattoush to a serving dish.
