Ingredients

  • 1 cup freshly grated coconut (or desiccated coconut rehydrated with a little water)
  • 1 small red onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1-2 teaspoons red chili powder (adjust to taste)
  • 1-2 teaspoons lime juice (adjust to taste)
  • 1/2 teaspoon salt (adjust to taste)
  • 1 small tomato, finely chopped (optional)
  • 1 teaspoon Maldive fish flakes (optional, for a more authentic flavor)

Instructions

Prepare the Ingredients

If using desiccated coconut, rehydrate it by mixing with a small amount of water until it reaches the consistency of freshly grated coconut.

Finely chop the red onion, green chilies, and tomato (if using).

Mix the Ingredients

In a large mixing bowl, combine the grated coconut, finely chopped red onion, green chilies, and tomato (if using).

Add the red chili powder and salt. Mix well to combine all the ingredients.

Add the Lime Juice

Add the lime juice to the mixture. Adjust the amount of lime juice to taste, ensuring a balanced, tangy flavor.

If using Maldive fish flakes, add them at this stage and mix well.

Serve

Transfer the pol sambol to a serving dish.
