Ingredients

  • 6 ripe tomatoes, peeled and chopped
  • 1 cucumber, peeled and chopped
  • 1 green bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 2 cups tomato juice
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)
  • Croutons (for garnish, optional)

Instructions

Preparing the Vegetables

In a blender or food processor, combine the chopped tomatoes, cucumber, green bell pepper, red onion, and minced garlic.

Blend until smooth. If you prefer a chunkier texture, blend less.

Adding the Liquids

Transfer the blended vegetables to a large bowl.

Stir in the tomato juice, olive oil, and red wine vinegar.

Season with salt and pepper to taste.

Chilling the Soup

Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until well chilled. This allows the flavors to meld together.
