Ingredients

  • 2 cups dried beans (such as navy or cannellini beans), soaked overnight and drained
  • 4 large potatoes, peeled and cut into chunks
  • 4 cloves garlic, minced
  • 2 tablespoons lard or butter
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Cook the Beans

Place the soaked and drained beans in a large pot.

Cover with water and bring to a boil.

Reduce the heat to low and simmer for about 1-1.5 hours, or until the beans are tender. Drain and set aside.

Cook the Potatoes

In a separate pot, bring salted water to a boil.

Add the potato chunks and cook until tender, about 15-20 minutes. Drain and set aside.

Combine Beans and Potatoes

In a large mixing bowl, combine the cooked beans and potatoes.

Prepare the Garlic Mixture

In a small skillet, heat the lard or butter over medium heat.

Add the minced garlic and sauté until fragrant, about 1-2 minutes. Do not let the garlic burn.

Mash the Beans and Potatoes

Pour the garlic mixture over the beans and potatoes.

Using a potato masher or fork, mash the beans and potatoes together until well combined and smooth. The mixture should have a slightly chunky texture.

Season with salt and black pepper to taste.

Serve

Transfer the matevž to a serving dish.

Garnish with fresh chopped parsley.
