In a large pot, bring the water to a boil.
Gradually add the millet flour to the boiling water, stirring constantly to prevent lumps from forming.
Reduce the heat to low and continue to cook, stirring frequently, until the millet is cooked and the mixture thickens, about 15-20 minutes.
Stir in the salt.
In a bowl, combine the yogurt and sour cream. Mix well.
If you prefer a sweeter dish, add the sugar and vanilla extract to the yogurt mixture and stir until the sugar is dissolved.
Once the millet porridge is cooked, remove it from the heat.
Gradually add the yogurt mixture to the porridge, stirring until well combined.
Adjust the consistency by adding more yogurt or water if needed.
Garnish with fresh mint leaves if desired.
