Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup milk (whole or coconut milk)
  • 1 large egg
  • Vegetable oil (for frying)

Instructions

Prepare the Dry Ingredients

In a large bowl, whisk together the flour, baking powder, salt, and sugar.

Cut in the Butter

Add the cubed butter to the dry ingredients. Using your fingers or a pastry cutter, cut the butter into the flour mixture until it resembles coarse crumbs.

Combine Wet Ingredients

In a separate bowl, beat the egg and then mix in the milk.

Make the Dough

Pour the wet ingredients into the dry ingredients. Stir until just combined, and a soft dough forms. If the dough is too sticky, add a bit more flour.

Shape the Bakes

Turn the dough out onto a floured surface and gently knead it a few times. Roll out the dough to about 1/2-inch thickness. Cut the dough into circles or squares using a cookie cutter or a knife.

Fry the Bakes

Heat vegetable oil in a deep pan or skillet over medium heat. Once hot, carefully add the dough pieces, a few at a time, without overcrowding the pan. Fry until golden brown on each side, about 2-3 minutes per side.

Drain and Serve

Remove the bakes from the oil and drain on paper towels. Allow to cool slightly before serving.
