Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/4 cup unsalted butter (cold and cut into small pieces)
  • 3/4 cup milk (adjust as needed)
  • Vegetable oil (for frying)

Instructions

Prepare the Dough

In a large bowl, combine the flour, baking powder, salt, and sugar. Mix well.

Add the cold butter pieces to the dry ingredients. Using your fingers or a pastry cutter, work the butter into the flour mixture until it resembles coarse crumbs.

Add Milk

Gradually add the milk to the mixture, stirring with a fork or spoon until the dough begins to come together. You may need to add a little more milk if the dough is too dry.

Knead the Dough

Turn the dough out onto a lightly floured surface. Knead gently for about 1-2 minutes until smooth.

Roll and Cut

Roll out the dough to about 1/2-inch thickness. Use a round cutter or the rim of a glass to cut the dough into circles.

Fry the Johnny Cakes

Heat vegetable oil in a large skillet over medium heat. You’ll need enough oil to cover the bottom of the pan.

Once the oil is hot, carefully place the dough circles into the skillet. Fry for about 2-3 minutes on each side, or until golden brown and cooked through.

Drain and Serve

Remove the Johnny Cakes from the skillet and drain on paper towels. Serve warm.
