Ingredients

  • 1 lb (450g) beef or goat meat, cut into bite-sized cubes
  • 1/4 cup vegetable oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 tablespoons tomato paste
  • 1 tablespoon ground paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1-2 tablespoons fresh parsley, chopped (for garnish)
  • Skewers (wooden or metal)

Instructions

Marinate the Meat

In a large bowl, combine the vegetable oil, soy sauce, lemon juice, tomato paste, ground paprika, ground cumin, garlic powder, onion powder, black pepper, and salt. Mix well to create the marinade.

Add the Meat

Add the beef or goat meat cubes to the marinade. Toss to coat the meat evenly. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated meat cubes onto the skewers.

Preheat the Grill

Preheat your grill to medium-high heat.

Grill the Brochettes

Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the meat is cooked to your desired level of doneness and has a nice char.

Garnish and Serve

Remove the skewers from the grill and let them rest for a few minutes. Garnish with chopped fresh parsley before serving.
