Muriwo Unedovi (Vegetables with Peanut Butter)

Ingredients
Base Ingredients
• 1 bunch of collard greens or kale, chopped
• 1 medium onion, finely chopped
• 2 tomatoes, chopped
• 2 cloves garlic, minced
• 2 tablespoons vegetable oil
• 1 cup (240 ml) water or vegetable broth
• 1/2 cup (120 g) peanut butter
• Salt to taste
Preparation
Sauté the Vegetables:
In a large pot, heat the vegetable oil over medium heat.
Add the finely chopped onion and minced garlic. Sauté until the onion becomes translucent.
Add the chopped tomatoes and cook until they are soft and well combined with the onions.
Cook the Greens:
Add the chopped collard greens or kale to the pot and stir well to combine with the sautéed vegetables.
Pour in the water or vegetable broth and bring to a boil.
Reduce the heat to low and simmer for about 10-15 minutes, or until the greens are tender.
Prepare the Peanut Sauce:
In a bowl, mix the peanut butter with a little bit of the cooking liquid from the pot until smooth.
Stir the peanut butter mixture back into the pot with the greens.
Simmer the Muriwo Unedovi:
Continue to simmer the stew for another 5-10 minutes, stirring occasionally to prevent sticking and ensure even cooking.
Season with salt to taste.
Serve:
Serve the muriwo unedovi hot with sadza (Zimbabwean cornmeal porridge) or rice.
