Kawari (Cow Foot Stew)

Ingredients
Base Ingredients
• 2 lbs cow feet, cleaned and cut into pieces
• 1 large onion, finely chopped
• 3 cloves garlic, minced
• 1-inch piece ginger, grated
• 2 large tomatoes, chopped
• 2 tablespoons tomato paste
• 2 tablespoons vegetable oil
• 1 teaspoon ground coriander
• 1 teaspoon ground cumin
• 1/2 teaspoon ground turmeric
• 1/2 teaspoon ground black pepper
• 1 teaspoon salt (or to taste)
• 1 teaspoon ground red pepper (optional, for heat)
• 4 cups water or beef broth
• 1/4 cup fresh cilantro, chopped (for garnish)
• 1 lemon, cut into wedges (for serving)
Preparation
Prepare the Cow Feet:
Thoroughly clean the cow feet pieces by scrubbing them and soaking them in water. Drain and set aside.
Cook the Cow Feet:
In a large pot, heat the vegetable oil over medium heat.
Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
Add the minced garlic and grated ginger, and cook for another minute until fragrant.
Add the Tomatoes and Spices:
Stir in the chopped tomatoes and tomato paste. Cook for about 5 minutes until the tomatoes start to break down.
Add the ground coriander, ground cumin, ground turmeric, ground black pepper, and salt. If using, add the ground red pepper for heat. Mix well.
Add the Cow Feet and Liquid:
Add the cow feet pieces to the pot and stir to coat them with the tomato and spice mixture.
Pour in the water or beef broth and bring the mixture to a boil.
Reduce the heat to low, cover, and let it simmer for 2-3 hours, or until the cow feet are tender and the stew has thickened. Stir occasionally and add more water or broth if needed to keep the cow feet submerged.
Finish the Stew:
Taste and adjust the seasoning with more salt and pepper if needed.
Serve:
Transfer the kawari to a serving dish.
Garnish with fresh chopped cilantro.
Serve hot with lemon wedges on the side.
