Ladob

Ingredients

Base Ingredients

• 4 ripe plantains or bananas, peeled and sliced
• 1 medium sweet potato, peeled and cut into chunks
• 1 medium taro root, peeled and cut into chunks (optional)
• 1 can (400 ml) coconut milk
• 1 cup water
• 1/2 cup sugar (adjust to taste)
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• 1/4 teaspoon vanilla extract
• Pinch of salt

Preparation

Prepare the Ingredients:

Peel and slice the plantains or bananas.
Peel and cut the sweet potato and taro root (if using) into chunks.

Cook the Ladob:

In a large pot, combine the coconut milk, water, sugar, ground cinnamon, ground nutmeg, vanilla extract, and a pinch of salt.
Bring the mixture to a gentle boil over medium heat.

Add the Vegetables and Fruits:

Add the sliced plantains or bananas, sweet potato, and taro root to the pot.
Reduce the heat to low and let the mixture simmer for about 30-40 minutes, or until the sweet potato and taro are tender and the flavors are well combined. Stir occasionally to prevent sticking and ensure even cooking.

Serve:

Remove from heat and let the Ladob cool slightly.
Serve warm as a dessert or a sweet side dish.
