• 4 medium kaukau (sweet potatoes), peeled and cut into chunks
• 2 tablespoons vegetable oil
• 1 teaspoon salt
• 1/2 teaspoon ground black pepper
• 1 teaspoon ground paprika
• 1 teaspoon dried thyme or rosemary
• 2 cloves garlic, minced (optional)
• Fresh herbs (like parsley or cilantro) for garnish (optional)

Preparation

Prepare the Kaukau:

Preheat your oven to 400°F (200°C).
Peel the kaukau (sweet potatoes) and cut them into bite-sized chunks.

Season the Kaukau:

In a large bowl, toss the kaukau chunks with vegetable oil, salt, black pepper, paprika, and dried thyme or rosemary. If using garlic, add it to the bowl as well.

Roast the Kaukau:

Spread the seasoned kaukau chunks in a single layer on a baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the kaukau is tender and lightly browned. Turn the pieces halfway through the roasting time to ensure even cooking.

Serve:

Remove from the oven and garnish with fresh herbs if desired.
Serve warm as a side dish or snack.
