Ingredients
Base Ingredients
• 2 tablespoons olive oil
• 1 large onion, chopped
• 2 cloves garlic, minced
• 2 carrots, peeled and diced
• 2 celery stalks, diced
• 1 potato, peeled and diced
• 1 cup green beans, chopped
• 1 cup cabbage, chopped
• 1 cup tomatoes, chopped (or 1 can of diced tomatoes)
• 4 cups vegetable or chicken broth
• 1/2 cup small pasta (such as ditalini or elbow macaroni)
• 1 teaspoon dried basil
• 1 teaspoon dried oregano
• Salt and pepper to taste
• Fresh parsley, chopped (for garnish)
• Grated Parmesan cheese (optional, for serving)
Preparation
Prepare the Soup Base:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic and cook for another minute.
Add Vegetables:
Add the diced carrots, celery, and potato. Cook for about 5 minutes, stirring occasionally.
Stir in the green beans, cabbage, and chopped tomatoes. Cook for another 5 minutes.
Add Broth and Seasonings:
Pour in the vegetable or chicken broth and bring to a boil.
Reduce the heat to low and simmer for about 20 minutes, or until the vegetables are tender.
Cook the Pasta:
Stir in the pasta and cook for an additional 10 minutes, or until the pasta is cooked al dente.
Season and Serve:
Add the dried basil, dried oregano, salt, and pepper. Adjust seasoning to taste.
Ladle the soup into bowls and garnish with chopped fresh parsley.
Serve with grated Parmesan cheese, if desired.
