Ingredients
Base Ingredients
• 2 1/4 teaspoons active dry yeast
• 1 cup warm milk (110°F/45°C)
• 1/2 cup granulated sugar
• 1/2 cup unsalted butter, melted
• 2 large eggs
• 1/4 teaspoon ground cardamom
• 4 cups all-purpose flour
• 1/2 teaspoon salt
• Vegetable oil, for frying
• Powdered sugar, for dusting (optional)
Preparation
Activate Yeast:
In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes, or until frothy.
Mix Ingredients:
In a large mixing bowl, combine the sugar, melted butter, and eggs. Mix well.
Stir in the yeast mixture.
Add the ground cardamom, flour, and salt. Mix until a dough forms.
Knead Dough:
Turn the dough onto a floured surface and knead for about 5-7 minutes, or until smooth and elastic.
First Rise:
Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Shape Kleinur:
Punch down the dough and turn it out onto a floured surface. Roll it out to about 1/4-inch thickness.
Cut the dough into strips and then into triangles or diamonds.
Twist each piece of dough into a knot or spiral shape.
Fry Kleinur:
Heat vegetable oil in a deep skillet or frying pan to 350°F (175°C).
Fry the kleinur in batches, turning them occasionally, until golden brown on all sides. This should take about 2-3 minutes per side.
Remove from the oil and drain on paper towels.
Serve:
Dust with powdered sugar if desired.
