Ingredients
Base Ingredients
• 1 kg kolokasi (taro root), peeled and cut into chunks
• 1/4 cup olive oil
• 1 large onion, chopped
• 3 cloves garlic, minced
• 1 large tomato, chopped
• 1/2 cup vegetable or chicken broth
• 1 teaspoon dried oregano
• 1 teaspoon dried thyme
• 1 bay leaf
• Salt and freshly ground black pepper, to taste
• Fresh parsley, chopped (for garnish)
Preparation
Prepare the Kolokasi:
Peel the kolokasi and cut into chunks. Rinse under cold water.
Cook the Kolokasi:
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and cook until translucent.
Add the minced garlic and cook for another minute.
Add Tomatoes and Broth:
Stir in the chopped tomato and cook for about 5 minutes, until the tomato softens.
Add the vegetable or chicken broth, dried oregano, dried thyme, and bay leaf.
Simmer:
Add the kolokasi chunks to the pot.
Season with salt and black pepper to taste.
Bring to a boil, then reduce the heat to low.
Cover and simmer for about 30-40 minutes, or until the kolokasi is tender.
Serve:
Garnish with fresh chopped parsley before serving.
