Morogo (Wild Spinach)

Ingredients
Base Ingredients
• 500 grams fresh morogo (wild spinach) or spinach
• 2 tablespoons vegetable oil
• 1 large onion, finely chopped
• 2 cloves garlic, minced
• 1 large tomato, chopped
• 1 teaspoon ground paprika
• 1 teaspoon ground cumin
• 1/2 teaspoon ground coriander
• Salt and black pepper to taste
• 1 cup water or vegetable broth
Preparation
Prepare the Greens:
Wash the morogo (or spinach) thoroughly and remove any tough stems. Chop the leaves into bite-sized pieces.
Cook the Base:
Heat the vegetable oil in a large pan over medium heat.
Add the chopped onion and cook until translucent.
Stir in the minced garlic and cook for an additional minute.
Add Tomatoes and Spices:
Add the chopped tomato to the pan and cook until softened.
Stir in the ground paprika, ground cumin, and ground coriander. Cook for a few minutes until the spices are fragrant.
Cook the Greens:
Add the chopped morogo (or spinach) to the pan.
Pour in the water or vegetable broth and stir to combine.
Cover and cook for about 10-15 minutes, or until the greens are tender and have absorbed the flavors.
Season and Serve:
Season with salt and black pepper to taste.
Serve hot as a side dish or main course.
