Preheat your grill to medium-high heat.
In a small bowl, mix together the minced garlic, olive oil, lemon juice, fresh parsley, smoked paprika, dried oregano, salt, and black pepper.
Pat the sardines dry with paper towels and brush them lightly with the garlic and herb mixture.
Place the sardines on the preheated grill. Grill for about 2-3 minutes per side, or until the sardines are cooked through and have nice grill marks.
Use a spatula to carefully turn the sardines to avoid breaking them.
Transfer the grilled sardines to a serving platter.
Garnish with additional fresh parsley and serve with lemon wedges.
