Taro And Tapioca

Ingredients

  • 2 cups taro root, peeled and cubed
  • 2 cups tapioca pearls (small or medium size)
  • 1 cup coconut milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 teaspoon salt
  • 4 cups water (for cooking tapioca)
  • 1/4 cup water (for cooking taro)

Instructions

Prepare the Taro

Peel and cube the taro root.

In a pot, add the taro cubes and enough water to cover them. Bring to a boil, then reduce heat and simmer until tender, about 15-20 minutes.

Drain the taro and set aside.

Prepare the Tapioca

In a separate pot, bring 4 cups of water to a boil. Add the tapioca pearls and cook according to package instructions, usually about 15-20 minutes, until they become translucent and tender. Stir occasionally to prevent sticking.

Once cooked, drain the tapioca and rinse with cold water to prevent sticking.

Combine and Cook

In a large bowl, combine the cooked taro, tapioca pearls, coconut milk, sugar, and salt. Mix well.

Transfer the mixture to a pot and cook over low heat, stirring occasionally, until everything is heated through and the flavors are well combined, about 5-10 minutes.
