Ingredients

  • 1 pound ground beef or lamb
  • 1/4 cup finely chopped onions
  • 1/4 cup fresh coriander leaves, chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 2 tablespoons ginger paste
  • 2 tablespoons garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili flakes (optional, for extra heat)
  • 1/2 teaspoon salt, or to taste
  • 2 tablespoons besan (gram flour) or breadcrumbs (for binding)
  • 2 tablespoons vegetable oil or ghee (for grilling)

Instructions

Prepare the Mixture

In a large bowl, combine the ground meat with the chopped onions, fresh coriander leaves, green chilies, ginger paste, garlic paste, ground cumin, ground coriander, turmeric, red chili powder, garam masala, chili flakes (if using), and salt.

Mix thoroughly until all ingredients are well incorporated. Add the besan or breadcrumbs to help bind the mixture. Mix again.

Shape the Kebabs

Divide the mixture into equal portions (about 8-10 portions).

Wet your hands with a little water or oil to prevent sticking. Shape each portion into a long, cylindrical kebab, about 6-8 inches long, and press gently onto skewers.

Grill the Kebabs

Preheat the grill or oven to medium-high heat (about 400°F or 200°C).

Brush the kebabs lightly with vegetable oil or ghee.

Grill the kebabs for about 10-12 minutes, turning occasionally, until they are evenly cooked and have a nice char on the outside. If using an oven, place the kebabs on a rack and bake for 20-25 minutes, turning halfway through.

Finish

Once cooked, remove the kebabs from the skewers and let them rest for a few minutes.
