Ingredients

  • 2 large tomatoes, diced
  • 1 large cucumber, diced
  • 1 red bell pepper, diced
  • 1 small onion, finely chopped
  • 200 g feta cheese, crumbled
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and black pepper to taste
  • Optional: black olives for garnish

Instructions

Prepare the Vegetables

In a large bowl, combine the diced tomatoes, cucumber, red bell pepper, and finely chopped onion.

Add the Cheese and Herbs

Add the crumbled feta cheese and chopped parsley to the bowl with the vegetables.

Make the Dressing

In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper.

Combine

Pour the dressing over the vegetable and cheese mixture. Toss gently to combine everything well.

Garnish

If using, add black olives on top of the salad for extra flavor.
