Peel the potatoes and cut them into thick sticks, about 1/2 inch wide. Rinse the potato sticks in cold water to remove excess starch.
Soak the potato sticks in a bowl of cold water for at least 30 minutes. This helps remove extra starch and makes the fries crispier.
Heat oil in a deep fryer or large heavy-bottomed pot to 325째F (165째C). The oil should be enough to submerge the potato sticks.
Drain and pat the potato sticks dry with a clean kitchen towel. Carefully drop a batch of potato sticks into the hot oil and fry for about 3-4 minutes, until they are soft but not yet browned. Remove them with a slotted spoon and drain on paper towels.
Increase the oil temperature to 375째F (190째C).
Return the partially cooked potato sticks to the hot oil in batches and fry until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.
While still hot, sprinkle the fries with salt and any other desired seasonings.
