Ingredients

  • 1 cup pickled tea leaves (laphet), rinsed and drained
  • 1 cup shredded cabbage
  • 1/2 cup sliced tomatoes
  • 1/4 cup roasted peanuts, crushed
  • 1/4 cup sesame seeds, toasted
  • 2-3 cloves garlic, minced
  • 1-2 green chilies, sliced (adjust to taste)
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon tamarind paste (optional)
  • 1 tablespoon sugar
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sliced green onions
  • 1/4 cup fried onions (for garnish)
  • 1/4 cup cooked chickpeas (optional)

Instructions

Prepare the Ingredients

In a large bowl, combine the pickled tea leaves, shredded cabbage, and sliced tomatoes.

Prepare the Dressing

In a small bowl, whisk together the minced garlic, sliced green chilies, fish sauce, lime juice, tamarind paste (if using), and sugar until well combined.

Combine the Salad

Pour the dressing over the tea leaves, cabbage, and tomatoes. Toss gently to combine.

Add Toppings

Sprinkle the crushed peanuts, toasted sesame seeds, chopped cilantro, sliced green onions, and cooked chickpeas (if using) over the salad. Toss lightly.
