Ingredients

  • 1 whole chicken (about 3-4 pounds), cut into pieces
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 4 cloves garlic, minced
  • 2 red chili peppers, finely chopped (adjust to taste)
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • Salt and black pepper to taste

Instructions

Prepare the Marinade

In a bowl, combine the olive oil, lemon juice, minced garlic, chopped chili peppers, smoked paprika, ground cumin, dried oregano, ground coriander, salt, and black pepper.

Mix well to combine all the ingredients.

Marinate the Chicken

Place the chicken pieces in a large zip-top bag or a shallow dish.

Pour the marinade over the chicken, ensuring all pieces are well coated.

Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.

Preheat the Grill

Preheat your grill to medium-high heat.

Grill the Chicken

Remove the chicken from the marinade and let any excess drip off.

Place the chicken pieces on the grill and cook for about 5-7 minutes per side, or until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F (75°C).

Serve

Remove the chicken from the grill and let it rest for a few minutes before serving.
