Ingredients

  • 2 cups cooked white rice
  • 2 ripe bananas, mashed
  • 1/2 cup coconut milk
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract (optional)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup shredded coconut (optional, for added texture)

Instructions

Preheat Oven

Preheat your oven to 350°F (175°C).

Prepare Mixture

In a large mixing bowl, combine the cooked rice, mashed bananas, coconut milk, sugar, and salt.

Mix until well combined. If using, stir in the vanilla extract and ground cinnamon for added flavor.

Add Shredded Coconut

If desired, fold in the shredded coconut for extra texture and flavor.

Bake

Grease a baking dish or line it with parchment paper.
