Ingredients

  • 2 cups almond flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1/4 cup slivered almonds (for topping)

Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, combine the almond flour, granulated sugar, baking powder, and salt.

In a separate bowl, beat the egg whites until they form stiff peaks.

Gently fold the beaten egg whites and vanilla extract into the dry ingredients until well combined.

Using a spoon or cookie scoop, drop small mounds of the batter onto the prepared baking sheet.

Sprinkle each mound with slivered almonds.

Bake for 12-15 minutes, or until the cookies are lightly golden around the edges.

Allow the cookies to cool completely on a wire rack before serving.
