Rinse the sago pearls under cold water to remove excess starch.
In a large pot, bring 4 cups of water to a boil.
Add the sago pearls to the boiling water, stirring occasionally to prevent sticking.
Cook until the sago becomes translucent and soft, about 10-15 minutes.
Reduce the heat to low and add the coconut milk to the pot. Stir well.
Cook for an additional 5 minutes, allowing the mixture to thicken.
Add the sugar, cardamom powder, and a pinch of salt. Stir until the sugar is completely dissolved.
Taste and adjust sweetness if necessary.
Pour the Saagu Bondibai into serving bowls.
Garnish with fresh fruit or nuts if desired.
