Ingredients

  • 3 large tomatoes, diced
  • 1 large red onion, finely chopped
  • 1 cucumber, peeled and diced
  • 1-2 green chilies, finely chopped (adjust to taste)
  • 1/4 cup fresh cilantro (coriander), chopped
  • 2 tablespoons lemon or lime juice
  • Salt to taste
  • Black pepper to taste

Instructions

Prepare the Vegetables

In a large mixing bowl, combine the diced tomatoes, finely chopped red onion, diced cucumber, and chopped green chilies.

Add Cilantro and Seasoning

Add the fresh cilantro to the bowl.

Pour in the lemon or lime juice.

Season with salt and black pepper to taste.

Mix and Chill

Gently mix all the ingredients until well combined.

Let the Kachumbari sit for about 10-15 minutes to allow the flavors to meld together. You can also chill it in the refrigerator until ready to serve.
