Heat the vegetable oil in a large skillet or Dutch oven over medium heat.
Add the pork cubes and cook until browned on all sides. Remove the meat from the pan and set aside.
In the same pan, add the chopped onion and cook until translucent.
Add the minced garlic and cook for another minute, until fragrant.
Return the browned pork to the pan.
Add the beef or chicken broth, black pepper, paprika, dried thyme, dried rosemary, and bay leaf.
Stir to combine all ingredients.
Bring the mixture to a simmer. Reduce the heat to low, cover, and cook for about 1.5 to 2 hours, or until the pork is tender and the flavors have melded together.
Check occasionally and add more broth if needed to keep the mixture from drying out.
Remove the bay leaf and adjust the seasoning with salt and additional pepper if desired.
