If using fresh potato greens or sweet potato leaves, wash thoroughly and chop. If using frozen greens, thaw them before cooking.
In a large pot, heat the vegetable oil or palm oil over medium heat. Add the chopped onion and cook until translucent.
Stir in the minced garlic and hot peppers. Cook for 2-3 minutes until fragrant.
Add the chopped potato greens to the pot and stir to combine with the aromatics.
Stir in the ground black pepper, paprika, dried thyme, and salt.
If using, pour in the beef, chicken, or vegetable stock for extra flavor. Stir well.
Cover the pot and simmer for 15-20 minutes, or until the greens are tender and fully cooked.
If using, stir in the chopped tomatoes and ground crayfish or fish powder. Cook for an additional 5 minutes.
Garnish with fresh cilantro or parsley before serving.
