Ingredients

  • 1/2 cup fine bulgur wheat
  • 1 cup boiling water
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup fresh mint, finely chopped
  • 1 cup tomatoes, diced
  • 1 cucumber, diced
  • 4 green onions, finely chopped
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • Salt and black pepper to taste

Instructions

Prepare the Bulgur

Place the bulgur in a large bowl. Pour the boiling water over the bulgur, cover the bowl with plastic wrap or a lid, and let it sit for about 10-15 minutes, or until the bulgur has absorbed the water and is tender. Fluff with a fork and let it cool to room temperature.

Combine Ingredients

In a large mixing bowl, combine the cooled bulgur, chopped parsley, mint, tomatoes, cucumber, and green onions.

Dress the Salad

In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.

Mix and Serve

Pour the dressing over the bulgur mixture and toss well to combine. Adjust the seasoning with additional salt, pepper, or lemon juice if needed.

Let the tabbouleh sit for at least 30 minutes before serving to allow the flavors to meld together.
