Ingredients

  • 1 lb (450 g) ground beef or lamb (or a mix of both)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt (or to taste)
  • 1 tablespoon olive oil (for grilling)

Instructions

Prepare the Mixture

In a large bowl, combine the ground beef or lamb with finely chopped onion, minced garlic, parsley, cilantro, ground cumin, ground coriander, ground allspice, paprika, black pepper, and salt. Mix thoroughly until well combined.

Shape the Kafta

Divide the mixture into equal portions and shape each portion into oval patties or long skewers, depending on your preference. If using skewers, you may need to soak them in water before threading the meat to prevent burning.

Preheat the Grill or Pan

Preheat a grill or grill pan over medium-high heat. Brush the grill grates or pan with olive oil to prevent sticking.

Grill the Kafta

Place the kafta patties or skewers on the grill or pan. Cook for about 4-6 minutes on each side, or until they are well browned and cooked through. The internal temperature should reach 160F (70C) if using ground beef or lamb.

Serve

Remove the kafta from the grill or pan and let it rest for a few minutes.

Serve the kafta with rice, salad, or pita bread, and a side of tahini sauce or yogurt sauce if desired.

Enjoy your meal!
