Peel and grate the potatoes. Place the grated potatoes in a large bowl and squeeze out excess moisture using a clean kitchen towel or cheesecloth.
Add the finely chopped onion, eggs, flour, baking powder, salt, and pepper to the grated potatoes. Mix well until everything is combined.
Heat a generous amount of vegetable oil in a large skillet over medium heat.
Drop spoonfuls of the potato mixture into the hot oil, flattening them slightly with the back of the spoon to form pancakes. Fry until golden brown and crispy, about 3-4 minutes per side.
Remove the pancakes from the skillet and drain on paper towels to remove excess oil.
