Ingredients

  • 2 large fish fillets (such as tilapia or cod), skinless and boneless
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt (adjust to taste)
  • 2 tablespoons chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 1 large tomato, chopped
  • 1 green bell pepper, chopped
  • 1/4 cup water
  • 1 tablespoon tomato paste
  • Fresh cilantro or parsley (for garnish)

Instructions

Marinate the Fish

In a small bowl, mix the lemon juice, olive oil, cumin, coriander, paprika, turmeric, black pepper, and salt.

Rub the marinade all over the fish fillets. Let the fish marinate for at least 30 minutes in the refrigerator.

Prepare the Sauce

Heat a little oil in a large skillet or pan over medium heat.

Add the chopped onions and cook until translucent.

Stir in the minced garlic and cook for another minute.

Add the chopped tomato and green bell pepper. Cook for about 5 minutes until the vegetables are softened.

Stir in the tomato paste and water. Simmer for 5 minutes, allowing the sauce to thicken slightly.

Cook the Fish

Heat a little more oil in another skillet or pan over medium heat.

Add the marinated fish fillets and cook for about 4-5 minutes on each side, or until the fish is cooked through and flaky.

Combine and Serve

Place the cooked fish fillets on a serving dish.

Pour the prepared sauce over the fish.

Garnish with fresh cilantro or parsley.
