Peel the pandanas fruits and remove the tough skin. The flesh inside should be soft and slightly fibrous.
Cut the pandanas into small cubes or slices.
In a large pot, add the cubed pandanas and enough water to cover the fruit.
Bring the water to a boil over medium-high heat. Reduce the heat and simmer for about 15-20 minutes, or until the pandanas is tender.
Drain the cooked pandanas and return it to the pot.
In a separate saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is well combined.
(Optional) Stir in the vanilla extract for added flavor.
Pour the coconut milk mixture over the cooked pandanas in the pot. Stir to combine and heat through for about 5 minutes.
