Ingredients

  • 2 cups (400g) potatoes, peeled and cubed
  • 1 cup (200g) maize (corn), fresh or frozen
  • 1 cup (200g) green peas, fresh or frozen
  • 1/2 cup (120ml) vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large tomato, diced
  • 1 bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt (or to taste)
  • Fresh parsley or cilantro (for garnish)

Instructions

Prepare the Vegetables

In a large pot, bring water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and set aside.

In a separate pot, cook the maize and green peas until tender. Drain and set aside.

Cook the Irio

Heat the vegetable oil in a large skillet over medium heat.

Add the chopped onion and cook until translucent.

Stir in the minced garlic and cook for another minute.

Add the diced tomato and bell pepper. Cook for about 5 minutes, until the vegetables are softened.

Stir in the ground cumin, paprika, black pepper, and salt.

Combine Ingredients

Add the cooked potatoes, maize, and green peas to the skillet. Mix well.

Cook the mixture for about 5-10 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.

Serve

Garnish with chopped fresh parsley or cilantro.
