  • 1/4 cup (60ml) extra-virgin olive oil
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2-4 tablespoons water (as needed for desired consistency)
  • Paprika (for garnish)
  • Fresh parsley (chopped, for garnish)
  • Extra olive oil (for drizzling)

Instructions

Prepare the Hummus

In a food processor, combine the chickpeas, tahini, lemon juice, minced garlic, and ground cumin.

Process the mixture until smooth, scraping down the sides of the bowl as needed.

While the processor is running, slowly add the olive oil and continue processing until well combined.

If the hummus is too thick, gradually add water, 1 tablespoon at a time, until you reach your desired consistency.

Season with salt to taste and blend again.
