  • 1/4 cup (60ml) water (or more, as needed)
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic (minced)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • Paprika (for garnish, optional)
  • Fresh parsley (for garnish, optional)

Instructions

Prepare the Hummus

In a food processor, combine the tahini and lemon juice. Process for about 1 minute, then scrape down the sides of the bowl and process for an additional 30 seconds. This step helps to cream the tahini.

Add the minced garlic, ground cumin, and salt to the tahini mixture. Process for another 30 seconds.

Add the chickpeas to the food processor. Process until smooth, about 1-2 minutes. If the mixture is too thick, gradually add water, 1 tablespoon at a time, until you reach your desired consistency.

With the food processor running, slowly drizzle in the olive oil. Process until fully incorporated and smooth.

Taste and adjust seasoning with additional salt, black pepper, or lemon juice if needed.

Serve

Transfer the hummus to a serving dish. Smooth the top with the back of a spoon.

Drizzle a little extra olive oil over the top and sprinkle with paprika and fresh parsley if desired.
