Ingredients

  • 1 lb beef stew meat, cut into chunks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 tablespoons vegetable oil
  • 6 cups beef broth
  • 1 medium butternut squash, peeled and cubed
  • 2 large carrots, peeled and sliced
  • 2 potatoes, peeled and cubed
  • 1 cup cabbage, chopped
  • 1 cup cooked pasta (e.g., macaroni or spaghetti), broken into pieces
  • 1 tablespoon fresh thyme, chopped
  • 1 bay leaf
  • 1 teaspoon ground cloves
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • Salt to taste
  • 1/2 cup lime juice
  • 1/4 cup parsley, chopped (for garnish)
  • Hot pepper sauce (optional)

Instructions

Prepare the Beef

In a large pot, heat the vegetable oil over medium heat. Add the beef chunks and brown on all sides.

Add the chopped onion and minced garlic to the pot and sauté until the onion is soft and translucent.

Add Tomato Paste and Broth

Stir in the tomato paste and cook for a few minutes.

Pour in the beef broth, and add the bay leaf, thyme, cloves, paprika, and black pepper.

Cook the Beef

Bring the mixture to a boil. Reduce heat, cover, and let it simmer for about 45 minutes, or until the beef is tender.

Add Vegetables

Add the butternut squash, carrots, and potatoes. Continue to simmer until the vegetables are tender, about 20-25 minutes.

Add Cabbage and Pasta

Stir in the chopped cabbage and cooked pasta. Simmer for an additional 10 minutes.

Season and Finish

Season with salt to taste. Add lime juice and adjust seasoning as needed.

Garnish with chopped parsley before serving.
