Ingredients

  • 4 medium-sized sweet potatoes, peeled and grated
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup coconut milk
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup raisins (optional)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat Oven

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.

Prepare the Mixture

In a large bowl, combine the grated sweet potatoes, granulated sugar, and melted butter. Mix well.

Add the flour, cinnamon, nutmeg, salt, and baking powder. Stir to combine.

Mix in the eggs, coconut milk, and vanilla extract until the mixture is smooth and well combined.

If using, fold in the raisins and chopped nuts.

Bake

Pour the mixture into the prepared baking dish and spread evenly.

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve

Allow the Pain Patate to cool in the baking dish before cutting into squares.
