Ingredients

  • 2 cups fruit puree (e.g., plums, apricots, or apples)
  • 1/2 cup sugar (adjust according to the sweetness of the fruit)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground cloves (optional)

Instructions

Prepare the Fruit

If using fresh fruit, peel, core, and chop it. Cook the fruit in a pot over medium heat until it softens and releases its juice. Then, mash or blend the fruit into a smooth puree. If using store-bought fruit puree, skip this step.

Cook the Puree

In a large saucepan, combine the fruit puree, sugar, and lemon juice. If desired, add ground cinnamon and ground cloves for extra flavor.

Cook over medium heat, stirring frequently, until the mixture thickens and reduces by about half, approximately 10-15 minutes.

Prepare the Tklapi Sheets

Line a baking sheet or a flat surface with parchment paper or a silicone baking mat.

Pour the thickened fruit mixture onto the prepared surface, spreading it evenly with a spatula to a thickness of about 1/8 inch (3mm).

Dry the Tklapi

Allow the fruit mixture to dry at room temperature. This can take 2-3 days, depending on the humidity and temperature. For quicker drying, you can use an oven set to the lowest temperature (around 150°F or 65°C) or a food dehydrator.

Once the Tklapi is dry and no longer sticky to the touch, it is ready.

Cut and Store

Cut the dried fruit sheets into strips or pieces.

Store Tklapi in an airtight container in a cool, dry place. It can also be wrapped in plastic wrap or parchment paper and stored in the refrigerator.
