Churchkhela

Churchkhela – traditional Georgian nut-filled candy
Georgia
⏱ — min. Serves: —

Churchkhela strings walnuts on thread and dips them repeatedly in thickened, boiled grape juice until they're coated in a sweet, chewy shell the color of dark chocolate. The candy is ancient, predating most modern sweets, made by Georgian monks in monasteries and now sold in markets throughout the country. It's both labor-intensive and strangely economical—a single churchkhela provides sustained energy for hours of work. Street vendors in Tbilisi hang them like necklaces in windows, and tourists immediately recognize them as distinctly Georgian.

Ingredients

  • 2 cups grape juice (preferably 100% pure)
  • 1/2 cup sugar
  • 1 cup walnuts, shelled and chopped
  • 1 cup hazelnuts, shelled
  • 1 cup flour
  • 1/4 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup water

Instructions

Prepare the Nuts

Preheat your oven to 350°F (175°C).

Spread the walnuts and hazelnuts on a baking sheet and toast them in the oven for 8-10 minutes, or until they are lightly golden. Allow to cool.

Make the Grape Juice Mixture

In a large saucepan, combine the grape juice and sugar.

Heat over medium heat, stirring until the sugar is fully dissolved.

Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes.

Prepare the Flour Mixture

In a separate bowl, mix the flour, cornstarch, cinnamon, nutmeg, and salt.

Combine and Cook

Gradually add the flour mixture to the grape juice mixture, whisking constantly to prevent lumps.

Continue to cook over medium heat, stirring constantly, until the mixture thickens to a pudding-like consistency, about 10-15 minutes.

Prepare the Mold

Line a baking sheet with parchment paper or a silicone mat.

Assemble Churchkhela

Dip the toasted nuts into the thickened grape juice mixture, making sure they are well coated.

Thread the nuts onto a string or skewer to form a chain. Allow excess coating to drip off.

Place the coated nuts on the prepared baking sheet.

Dry the Churchkhela

Allow the Churchkhela to dry in a cool, dry place for 2-3 days. You can hang them or lay them flat on the baking sheet.

Serve

Once fully dried, cut the Churchkhela into pieces and serve.

Enjoy your meal!
