Ingredients

  • 1 lb (450 g) pork shoulder or pork belly, cut into bite-sized pieces
  • 4 large potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 cup sauerkraut, drained
  • 2 cups chicken or vegetable broth
  • 1 teaspoon caraway seeds
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh dill, chopped (for garnish)

Instructions

Cook the Pork

Heat the vegetable oil in a large pot over medium heat.

Add the pork pieces and cook until browned on all sides. Remove the pork and set aside.

Cook the Vegetables

In the same pot, add the chopped onion and cook until soft and translucent, about 5 minutes.

Stir in the minced garlic and cook for another minute.

Add Potatoes and Sauerkraut

Add the diced potatoes and sauerkraut to the pot. Stir to combine.

Add Broth and Seasonings

Return the browned pork to the pot.

Pour in the chicken or vegetable broth, add the caraway seeds and bay leaf, and stir to combine. Bring to a boil.

Simmer

Reduce heat to low and simmer for 30-40 minutes, or until the potatoes and pork are tender.

Season and Serve

Season with salt and black pepper to taste.

Garnish with fresh dill before serving.
