Ingredients

  • 1 cup dried red beans (soaked overnight and drained)
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 cup coconut milk
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup granulated sugar (adjust to taste)
  • 1/4 cup raisins
  • 1/4 cup chopped dried fruit (such as apricots or prunes)
  • 1/2 cup cooked sweet potatoes, diced
  • 1/4 cup cooked white rice
  • 1/2 teaspoon vanilla extract

Instructions

Cook the Beans

In a large pot, add the soaked and drained beans, cinnamon stick, and cloves. Cover with water and bring to a boil.

Reduce heat and simmer until beans are tender, about 45-60 minutes. Remove the cinnamon stick and cloves.

Prepare the Mixture

Using a blender or immersion blender, purée the beans and their cooking liquid until smooth.

Return the bean purée to the pot. Stir in the coconut milk, evaporated milk, sweetened condensed milk, and granulated sugar. Mix well.

Add the Ingredients

Add the raisins, dried fruit, sweet potatoes, and cooked rice to the pot. Stir to combine.

Simmer the mixture over low heat, stirring occasionally, until it thickens slightly and the flavors meld, about 20-30 minutes.

Finish and Serve

Stir in the vanilla extract. Taste and adjust sweetness if necessary.

Enjoy your meal!
