Rinse the dried hibiscus flowers under cold water.
In a large pot, bring 8 cups of water to a boil.
Add the rinsed hibiscus flowers to the boiling water.
Reduce the heat and let it simmer for about 15-20 minutes.
After simmering, remove the pot from heat and let it steep for an additional 10 minutes.
Strain the liquid through a fine sieve or cheesecloth to remove the hibiscus flowers.
Stir in the sugar until completely dissolved. Adjust the sweetness to your preference.
If using pineapple juice, add it to the strained liquid.
Optionally, add dried mint leaves for additional flavor.
Let the bissap cool to room temperature.
Refrigerate for at least 2 hours, or until thoroughly chilled.
